About Stacey

Hello! I am so excited that you found Sweet Stacey's Bake Shop.  I have had a life-long love of mine to feed people and make them smile. I forced many adults to enjoy the mud-clay mud pies even that I made after a rainy day! Luckily, my baking has improved.  :) I am very proudly a graduate of Auguste Escoffier, School of Culinary Arts with a Diploma in Pastry Arts.
Why baking? And what am I thinking about when I create?
When I bake, I honor all those bakers that I watched for hours on weekend mornings in front of the windows of the Knott's Berry Farm bakery.  I smile as I reflect on me begging to be allowed to stand and stare way longer than my brother and folks wanted to watch the cake decorating being performed.  To me, it was magic.  I thank my dad for endlessly driving me to Knott's and allowing me to watch the sugary treats being produced.  After all the cakes were decorated, I was allowed to move to the other side of the courtyard at Knott's and watch the chocolate makers make the most fudgy and delicious things that I had ever seen in my life! And, when my dad got tired of propping me up so that I could see through the windows, Mr. Knott often appeared to do the heavy lifting of me...until he was called back to work by Mrs. Knott. Oh the memories! But, the rush of seeing cake decorating and treat making has never gotten old--when I am not baking, teaching or taking Pilates classes or daydreaming about treats, I am often found gawking at someone creating their wonderful desserts.

 How Did We Start Baking Zero Gluten and Vegan Treats?

Why vegan? One of my beautiful daughters is vegan and she challenges herself to create wonderful vegan treats.  Because I bake as well, I was forwarded a "Vegan Concha" recipe and I decided to make it and surprise her with it. It was the most delicious pastry that I ever tasted.  And, to see the smile on her face as she ate it was priceless.  In honor of this daughter and the many others that have chosen to have a vegan lifestyle, I bake vegan creations.

Why Zero-Gluten and what does that mean at Sweet Stacey's Bake Shop? As I was baking my way through the Diploma of Pastry Arts Program with Auguste Escoffier School of Culinary Arts, I was portioning out my assignments and handing them out excitedly to my friends at the Pilates studios I taught at. (I know! Weird?!?!? But, maybe I started a trend of Pilates and Pastries going hand-in-hand!)  However, I was saddened that many passed on the taste experience as they CHOSE to eat gluten-free.  I wanted my bakery to never exclude anyone if I could help it. The ingredients in the zero-gluten products are gluten-free AND I keep the utensils separated from the rest and change my gloves, etc.  However, realistically-speaking, my house is NOT gluten-free.  It is filled with love and gluten! So, please be aware that if you are on a severe no-gluten diet, this bake shop is NOT for you.  I am sorry.  Call me though and I will gladly refer you elsewhere.
